Puppy diet question

So I will be getting my EBT on Sunday!! He is 6-8 months old and about 28.9 lbs, and I am trying to figure out what to feed him. The shelter sent me home with some Ideal Balance, but I know that's not really a great food so I'm planning to change it up. I was reading some of the other posts and I saw that someone was saying they really liked Royal Canin for puppies. I got the kind for puppies up to 12 months between 21-55 lbs (has red on the bag, if pictures are needed let me know). Though I was looking on that dog food adviser website and it was saying it was super low rated dog food. Should I return it and get something else? I know a lot of y'all seem to like the Blue Buffalo wilderness stuff, and I did see mention of Castor and Pollux dog food which my local Petsmart does have. Those were the only two brands I have seen mentioned on here that I saw at the Petsmart, though I can go check out Tractor Supply as well.

I had a question about figuring out how much to feed him. It says to go by the adult target weight, should I go for 40 or 44? The shelter people have said they think he is a mini and won't get much bigger. However, I know at least one of y'all said you think he is too leggy for a mini and will fill out. If I go by the the 40 lb goal, and pick 7 months it says 2 7/8 cups.  Should I divide this into half so he gets fed two times a day?  Does this sound like the right thing? I promise I have been reading all the previous posts and this sounds right, but I am paranoid about getting something wrong :p.

Second question is about adding stuff into his food (meat, veggies, fruit). I read the "Nutrition Section" that has been linked in a few posts, and I have looked around and from what I think I understand you can substitute about 20% of their daily food ration with the meat add ins (or am I making this up?). I just didn't know if there was a website y'all could direct me to so I could read more about this kind of thing. I like the idea of adding chicken livers, eggs, and veggies to his food since I always have those on hand. How do you decide what to put in that day and do you do it everyday? I was also reading that someone was liking adding coconut oil (rather than salmon I think) to the food. Do you do this and things like eggs and veggies, or either or?

I'll be doing some more googling, and reading further back through the forum posts (so if I missed one explaining all this just link me). I wouldn't mind being linked to a website that will help me figure this out on my own if it's too many questions.  Thanks for any info you can give.

Sorry "Fix"... You got us all at a bad time of the year, normally you would have got 6 replies by now.... but I guess everyone is running around expecting Christmas gifts that are not a quarter as important as your great Christmas gift! No need check any other website, it's all here... spend a couple of hours reading and you'll find all your answers.  In short, yes, primarily you want a good, Grain Free kibble, like Pure Vita, Or California Naturals or Orijien .... and then you will slowly add, cooked chicken, raw meat, livers, veggies , eggs as a variety, but don't over do any of them... Salmon Oil, Coconut Oil and Probiotics are all good additives... But remember, keep him on what the shelter had him on to begin with and break him in by adding 15%, then 25%, then 40% etc. etc, until you have him on 100% of the new diet after about 2 to 3 weeks. More importantly lots of love, exercise, discipline and cuddles... (None of these do you need break in, you can shower them on from day one).

Skin and fur health will be ultra important on a thin furred pink skinned White Bullie. These two products combined with a grain free diet will hedge bets in your favor.
