Scared, insecure, biting

Hi again! So an update on Jaws (my Bullie). I have been feeding him treats while walking, passing strangers and other dogs, and he is improving with his behavior after suddenly not liking people we meet on our walks.
Then, he started attacking me when I would come home from work, or if I was home and my husband would come home. How did I fix it? I had my husband put the muzzle on him before I got home and he wouldn't be able to grab my clothes or nip me. And my husband would also ignore him until he was behaving like a good boy. That only took about 7-10 days to fix.
New problem now!!!! (This dog is giving me a run for my money).
He now attacks our feet when we move to quick. He drags his bones under our coffee table and if we move to get up or just move quickly, he will jump up, bite our feet and then go CRAZY. We have had to grab his collar and just hold him and calmly say "relax". It takes him about 1 full minute to come back to reality.
My question is: how do I fix this? He seems to be in another world and doesn't realize what he's doing. I feel so bad for him cause he's so anxious and high strung that any movement scares him and he attacks.
He is one year old. I've had him since 8 weeks. He was a singleton (only puppy). Everytime we fix one issue it seems another starts. I found a trainer and we start next week. But I feel bully owners might have good tips.
Also, I'm trying not to pin him cause he's so anxious and insecure already and someone on here said that pinning that type of dog just makes it worse. Well, when he attacks, how do I control him and get him to calm down without pinning. And what can I do to make him feel secure in that situation.
